1 cup of frozen berries or fresh
2 tablespoon chia seeds
1 cup organic spelt flour or spelt oats ( made into flour or quinoa flour)
Pinch of Himalayan salt
1 cup of organic rice milk or
1 cup cashew nuts soaked 1-2
1 juice of a mandarin
2 ripened bananas
2 tablespoons maple syrup
1 teaspoon coconut oil
Put frozen berries in a small bowl and set aside
Mix half the chia seeds in 1⁄2 cup of water, and allow
to sit until a gel consistency forms.
Mix gluten free flour, salt and almond milk & mandaritogether in a large
Add soaked cashew nuts, bananas, maple syrup and
remaining chia seeds to the processor and blend
until smooth and creamy. Add to a bowl with other
ingredients, slowly mix in and set aside.
Heat coconut oil in a frying pan over a low heat
and pour in spoonfuls of the pancake mixture
Cook until bubbles appear on the surface,
and then flip to cook the
other side. If you find it difficult to flip the pancake
over use two spatula to help turn over without
breaking them apart. Be careful as they are fragile!
Serve with fresh blueberries or melted frozen

FREE NUT CHEESE TASTER
It's that time of the year! Festive season is here. It's time to get your swimmers out and embrace summer!
What happens to you over the festive season? Do you find your weekends jam packed with catching up with friends, Xmas parties, celebrations and even birthday parties to attend.
One of my tips throughout the festive season is to get into a habit of making your own treats, dips, crisp breads and raw platters to take you your parties, so you can continue to eat healthy and FEEL amazing!
Check out my simple and easy to make raw vegan nut cheese. We made this on my recent Hunter Valley Retreat and all my guests where so impressed! We will also be educating my guests on the 1~ Day Retreat Xmas Raw Vegan Lunch on the 14th, however you can get your free Nut Cheese Taster here.

FREE NUT CHEESE TASTER
- 1 cup almonds, soaked, drained and skins removed
- 3/4 cup water
- 2 tablespoons olive oil
- 3 tablespoons lemon juice
- 1 clove garlic
- pinch Himalayan Salt
Soak almonds overnight in water.
The skins should pop
off easily. Kids love doing this process.
Or soak in boiling water for 10 minutes allow to cool.
Drain and pop off skins.
Place all ingredients in food processor.
Process until smooth.
Place nut mixture in nut-milk bag or colander lined with cheese cloth.
Give a light squeeze and place in refrigerator over-night to set up.
The cheese can be used at this point or if you want it more firm, place it in the dehydrator for 6+ hours (at 115 degrees) to form a rind.
Tips soaking almonds.
Soaked almonds with skins removed.
Soak them in hot water, wait at least 10 minutes or until water is cooled, the skins should pop
off easily. Kids love doing this process.
The almonds should be well blended and smooth.
The mixture in the nut-milk bag, before putting it in the refrigerator.

Here is my version or a Raw pad Thai. The zucchini replaces the noodles and the coconut lime dressing
giving it a lovely zest and Thai taste. Bell peppers are high in Vitamin C; they contain fibre, protein and
iron. I love the colours created in this dish.
2 zucchini (courgettes), spiralised
1 carrot, spiralised
2 cups (1 lb/450 g) beansprouts
1 yellow capsicum (bell pepper), sliced
4 spring onions (scallions), diced
3⁄4 cup (3 oz/85 g) cashews, chopped
1⁄2 cup fresh coriander (cilantro), chopped
Juice of 1 lime
1 tablespoon olive oil
1⁄4 teaspoon Himalayan pink salt or Celtic sea salt
cup mint leaves, to garnish
For the Coconut and Lime Dressing
1 garlic clove, crushed
1 tablespoon fresh turmeric, grated (shredded)
1⁄2 tablespoon fresh root ginger, grated (shredded)
Juice of 4 limes
1 teaspoon manuka honey or alternative sweetener such as stevia or palm sugar
2 tablespoons coconut kefir or coconut milk
To make the dressing, blend all the ingredients until smooth in the bowl of a food processor or

beansprouts, peppers, spring onion and cashew nuts.
Stir the dressing through the vegetables. Garnish with fresh mint leaves.

Why is YOGA becoming more and more popular?
Well if you are anything like me, you felt a difference from the very first day you tried it.
I still remember my very first yoga class, and from that day on I knew I wanted to become a Yoga Teacher.
Even though, and at that time I owned two amazing successful Businesses in the Hair And Beauty Industry.
Number one obstacle was how in earth was I ever going to stand up in front of a lot of people and speak confidently?
And number two was how on earth can I do this as a career and make that change? Number three was how on earth will I ever get into the splits or get my leg over my head!
Looking back I can now give thanks, gratitude and value to this amazing practice called YOGA.
Not only does it give you confidence, improves your own self esteem, self worth to follow your dreams and true passions and defines the truth of your own identity, it has far more health and brain benefits to it than any other exercise in the universe.
You know how much I love yoga and put it at the top of my exercise regime list, however when you learn the health benefits that go with YOGA you too will start practicing more and more and finding ways in your own life to work out how you can get along to a yoga class 3-7 times a week or start developing your own little yoga sequence. Making it part of your being, your life. The problem we have in today's world is we are too consumed by the 'doing' Yoga takes you into your mat, into your body and stills your mind so you practice 'being' have you ever asked why we are called human beings! It's all part of the key to real happiness peace and enlightenment 'learning to be and being'

What Yoga has taught me on my journey is, how powerful the mind is I was aware of how powerful
positive thinking was years ago, and seemed to be born with that ‘I can do it attitude’ Maybe it is a
second child trait. Psychology studies show the second child often wants to keep up with the eldest,
and doesn’t seem to have as much fear as the eldest. I find this true when I look at my own
daughters, and after sharing many stories. It reminds me of a recent story of my two daughters when
they were asked to fly on a domestic flight to visit their Daddy, all on their own. My youngest
daughter, millijana jumped for Joy and couldn’t wait, she embraced this opportunity fearless and
excitement, yet my eldest beautiful centered daughter Lucia, felt anxious, fearful and not convinced
she wanted to do this. Over the years I have studied different communication styles, including my
own of course, and learnt her personality type quickly and easily. Some of these things were, not liking
to be forced to do something without much notice and details. It is interesting the reverse psychology when you back off,
and let go of force then the energy shifts, this is also part of the Yogic philosophy. Deepak Chopra
speaks of this one often, let go of force and attachment. In this scenario, I supported her emotional
needs by letting her know she did not have to make a decision right away and to have a think about. I
was able to let her know of the positives over time and she then came to a conclusion is would be a
great confidence builder for her. At the age of 9yrs I felt it was important she felt safe and secure with
out force or fear. Working through our different communication styles takes courage, time and an
open mind. One of the most rewarding breakthroughs I have had on my journey is to open my mind
to see another side to someone else’s views with compassion, and even though I thought I was not rigid or one way
thinking, it has helped me to learn how fixated the fragmented mind can be or become.
This book will take you on a wonderful journey in exploring yourself to another level and help
untangle the threads so you can feel free, live happy, healthy and most of all a real joyous life with
love, peace abundance and carry your home your peaceful place where ever you go in life.
I was in a story…
One day the old story had to end and it was time to start the NEW one, to recall upon the peace
happiness unlimited love abundance back into my life. I was always a big believer in ‘You are the
Author of your own life’ and I have been fortunate enough to live a most of it happy, achieving my
goals, and choosing to do what I love to do and spend a majority of my time doing it. That is special.
But somewhere along the line, toxic mind virus started to prop back in. Once I started to practice
meditation, and sitting in silence this allowed me to see, feel, and notice things were not going the
way I anticipated. There were some limitations I had stated to place in my life. It was time to get back
into the drivers seat and gain some real momentum again. One of the greatest things I started to
really learn was CORE VALUES. Something that had been missed early on in my life, something I was
not taught at school or valued enough to be aware of what was my core values, what was aligned to
my core or authentic self and what was my soul purpose. A question frequently asked my many.
